Okay, here’s the deal. I’m told I make the best enchiladas but… as you can see, I cheat! Look, I’ve made it all from scratch and it’s delicious, but why make things complicated when the easy route tastes just as good?
Landon (my youngest boy) requested enchiladas for dinner last night, so enchiladas I made.
Landon discovered enchiladas when he first got diagnosed with Type 1 Diabetes (Age 5, two months from turning 6). He had just gotten out of the hospital and it was our first day to meet with the endocrinologist. This was the day that we all learned how to administer his insulins. Breaks my heart every single day 🙁 We tested his blood sugar at the doctor’s office, it was below 80 so Doc said to go eat first then give insulin afterwards. We hit the nearest Taco Cabana (fast food Mexican Restaurant in Texas) and for some random reason he ordered enchiladas. He has been hooked ever since.
